Yummy Salad
Tonight I made a delicious salad that I am naming "Green Slaw", using several of the veggies from my weekly market bag from The Greener Grocer. Hopefully, if you try this recipe, you will use fresh, locally-grown produce from your area!
Ingredients:
For salad:
1 sm. head green cabbage, cored & shredded
1 green bell pepper, seeded, cored & chopped
3 stalks celery, trimmed, halved lengthwise & chopped
handful Italian parsley, chopped
1 cucumber, peeled, seeded & chopped
2 ears of corn, kernels hulled
For dressing:
1 cup light sour cream
handful Italian parsley, finely chopped
4 stalks fresh rosemary leaves, finely chopped
1 shallot, finely chopped
2 Tablespoons dijon mustard
Prepare and combine the vegetables. Mix well. Prepare and combine ingredients for the dressing. Distribute the dressing evenly over the vegetables, and mix well. Refrigerate for at least 30 minutes prior to eating.
Feel free to improvise with the ingredients and amounts -- and have fun! The Green Slaw was a yummy, healthy salad enjoyed by the whole family!
